Mist with avocado oil and toss so that both sides are coated. Sprinkle with salt, pepper, garlic, and parmesan. Air fry 400F and cook for 7-8 minutes, then flip/shake, and continue cooking another minute or 2 or until all pieces are seared and crisp! Sprinkle with more parmesan after cooking if preferred. Magic Mashed Potatoes: | like mixing | cup of regular mashed potatoes (instant potatoes are fine here), with | cup riced cauliflower for extra hidden veggies! Season with salt, pepper, garlic, and add a dollop of plain greek yogurt for sour cream vibes if preferred. (I follow this same method for rice as well) Taco shell bowl: mist both sides of your tortilla with avocado oil, place in a hot skillet and give it a quick toast until both sides are golden brown. Immediately remove from skillet and press into an oven safe bowl (I just use a ceramic cereal sized bowl). Bake 350 for 5-8 minutes. Let it cool then remove from bowl and add fillings of choice! Fit-ish Mac + Cheese: Microwave single serve mac and cheese cup according to package directions, add cheese packet that comes with it. Stir in 1/4 cup cottage cheese or greek yogurt, | laughing cow cheese, and 2 TBS shredded cheese until smooth. Season with seasonings of choice and microwave again for 30 seconds or until hot. This makes 2 servings for me! Air Fried Green Beans: | like to get fresh green beans (or long cut frozen), mist with oil, season with lemon pepper and garlic then air fry on 370 for 7-8 minutes or until crisp. Optional sprinkle of parmesan. Works with broccoli, asparagus, etc. Italian Side Salad: any lettuce/green you like, thin sliced red onion, tomato, banana peppers/pepperoncini peppers, chopped turkey pepperoni, and crushed croutons. Drizzle of light Italian dressing (with optional splash of banana pepper juice), toss and serve! Lazy Girl Baked Potato: grab any potato (| usually do russet) and poke holes all over with a fork. Toss in the microwave and microwave for 5-6 minutes. Poke your fork in it, if it’s tender, it’s done! If it's not, microwave another minute. Repeat until tender. Add toppings of choice. Smashed Potatoes: | love the Little Potato Company potatoes for these, but any will work. Microwave according to package directions until tender. Lay them on a baking sheet and smash with the bottom of a glass. Season with salt, pepper, add shredded cheese, bacon bits and broil until cheese is melty. Mini Salads (Taylor Farms mini salad kits are my favorite. | love the Nashville Hot one and the Caesar, they're perfect size!) TIP: | like to use HALF of the dressing and add a splash of banana pepper juice or pickle juice to make it go further, saves a ton of cals!) 134
