Ingredients

  • 2 boneless skinless chicken tenderloins
  • 1/3 cup minute rice (dry)
  • 1/2 cup chicken broth
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp garlic
  • 1/4 tsp italian
  • 2 TBS parmesan
  • 2-3 TBS cream of chicken soup
  • 1 TBS tomato paste
  • 2 TBS sundried tomatoes
  • finely chopped spinach (to taste)
  • caramelized onion (optional, to taste)
  • 2 TBS shredded italian cheese (for topping)

Optional

  • seasoning salt
  • italian
  • paprika

Instructions

    Prepare chicken, I like to season with seasoning salt, italian, and paprika, then air fry 400F 5 min, each side (let them rest a couple minutes before shredding or chopping into small pieces), rotisserie chicken also works great here

    In a small glass tupperware or baking dish, add rice, broth, seasonings, cream of chicken, tomato paste and stir until combined

    Gently mix in cooked chicken, parmesan, tomatoes, spinach. And sprinkle with italian cheese. Cover with foil and bake 375 for 20-25 minutes
