Ingredients
- 2-3 carrots (large)
- red onion (optional, thinly sliced)
- 2 TBS peanut butter
- 3 TBS soy sauce
- 1 TBS sesame oil
- 1/4 cup vinegar
- 1 TBS garlic (minced)
- 1 TBS sugar
- red pepper flakes ((I do 1-2 tsp))

Using a vegetable peeler, hold carrot and glide peeler down the base of your carrot

Similar to peeling the carrot like you normally would, but keep going!

Instead of stopping after the outer skin is gone, keep peeling down the length of the carrot to create thin, ribbon-like strips.

Rotate the carrot every few strokes to keep it even, and stop when it gets too small to hold safely.
