CHEESY CHICKEN BROCCOLI MAC

Ingredients

  • 1 mac and cheese cup (single serve of choice (I like Velveeta))
  • 1 light laughing cow cheese
  • 3-4 oz chicken
  • salt (to taste)
  • pepper (to taste)
  • garlic (to taste)
  • 1/4 cup broccoli (or more cooked)
  • 1/3 cup greek yogurt
  • 1/3 cup blended cottage cheese
  • 2 TBS shredded colby jack cheese

Instructions

    Prepare chicken (or use rotisserie chicken in a pinch), I like to season tenderloins then air fry 400F 5 min, each side (let them rest a couple minutes before shredding or chopping into small pieces)

    Prepare mac and cheese cup according to package directions

    While itโ€™s still hot, add cheese packet that comes with it, laughing cow cheese, greek yogurt, seasoning, broccoli, and your chopped chicken

    Add shredded cheese on top and continue microwaving for 30 seconds or until hot/melty.
