Ingredients

  • 2 pieces chicken (boneless skinless chicken tenderloins)
  • 1 cup hashbrowns (frozen diced)
  • 1 piece cheese (light laughing cow)
  • 1/4 cup Greek yogurt (plain nonfat)
  • 1/4 cup cream of chicken soup (reduced fat)
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 TBS cheddar cheese (shredded)
  • 3 TBS cornflakes (crushed (or ritz crackers))

Instructions

    Prepare chicken, I like to season with seasoning salt, pepper, garlic, paprika, then air fry 400F 5 min, each side (let them rest a couple minutes before shredding or chopping into small pieces), rotisserie chicken also works great here

    In a small baking dish (or glass meal prep container), mix together all the ingredients listed (EXCEPT the cornflakes).

    Add crushed cornflakes on top + mist with cooking spray or drizzle with melted butter, bake on 375 for 25 minutes

    If you’d like to make this in a large casserole dish, multiply the ingredients by 4 and bake in a 9x13 baking dish for 25-35 minutes!

    Store in fridge for about 5 days or freeze to keep longer. I reheat in microwave!
