Ingredients

  • 6 chicken tenderloins (boneless, skinless)
  • potatoes (of choice (I use 1 pack of the Little Potato company microwave packs, from Walmart))
  • shredded cheese (of choice, I use colby jack)
  • 3 slices bacon (or bacon bits)
  • 1 container greek yogurt (5oz PLAIN)
  • 1/2 pack ranch seasoning
  • hot sauce (splash (to taste))

Sauce

  • seasoning salt (for seasoning potatoes)
  • pepper (for seasoning potatoes)
  • garlic (for seasoning potatoes)
  • rosemary (for seasoning potatoes)

Instructions

    Dice + season potatoes (I season with seasoning salt, pepper, garlic, rosemary OR the little seasoning pack that comes with the microwave pack I get) spray with cooking spray and air fry 400F for 10 min, shake, 5 more minutes (or until potatoes are crispy but fork tender)

    Season + cook chicken (I air fry mine, see pg. 25 for instructions)

    Mix together greek yogurt, 1/2 ranch seasoning packet, and a splash of hot sauce

    Assemble bowls/tupperware in this order: -1/2 cup diced potatoes -2 chicken tenderloins (I slice mine) -ranch sauce -sprinkle of cheese (approx 1 TBS) -bacon bits or crumbled bacon (approx 2 TBS)
