Ingredients
- 4 oz chicken of choice
- 2 TBS black beans
- 2 TBS corn
- 2 TBS diced red onion
- 2 TBS diced red pepper
- cilantro (to taste)
- cabbage or slaw mix (handful)
DRESSING:
- 1 TBS light mayo
- 2 TBS Greek yogurt
- 1/2 tsp fajita seasoning
- lime (squeeze of)

Prepare chicken, I like to season these with fajita seasoning then air fry 400F 5 min, each side (let them rest a couple minutes before shredding or chopping into small pieces), rotisserie chicken also works great in this one!

Add all ingredients to a bowl or tupperware, shake, stir, or toss until evenly coated and combined.

When ready to eat, sprinkle in chili cheese fritos for crunch and enjoy cold!
