- 1 cup protein pancake mix
- 3/4 cup water
- 6 slices deli ham
- 3 slices american, swiss, or provolone cheese
- 3 slices bacon
optional jam or jelly
- jam or jelly (I like strawberry)
optional powdered sugar
- powdered sugar (swerve for me)
Instructions

Mix 1 cup protein pancake mix and 3/4 cup water (or more) until pancake batter consistency, try not to overmix, lumps are fine!

From this batter, make 6 mini sized pancakes (in a skillet or griddle)

Assemble 3 sandwiches using 1 pancake as the bottom “bun”, 2 slices ham, 1 slice cheese, 1 slice of bacon, blob of jelly, then another pancake as the top “bun”.

Wrap (I wrap in a paper towel, then foil so that I can easily unwrap and heat up in paper towel when I’m ready).

Store in fridge for about 5-6 days or freeze to keep longer. I reheat in microwave!

I like to sprinkle a bit of powdered sugar/swerve on top before eating, you can also serve with sugar free pancake syrup for dipping!
