No Peek Fiesta Chicken

Ingredients
- 2 cups minute rice (uncooked)
- 2 cans cream of chicken
- 1 can chicken broth
- 1 can water
- 1 tsp caldo de tomat bullion
- 4-6 chicken breasts
- 1 packet fiesta ranch seasoning
- 5 oz plain/unflavored greek yogurt
- shredded cheese (optional)
- fresh pico (optional)

Instructions

In a 9x13 baking dish, pour 2 cups of uncooked minute rice.

Add cream of chicken soups, chicken broth, and stir until combined.

Fill up that chicken broth can with water + stir in 1 tsp of the tomato bullion seasoning, then pour over. Stir everything until combined.

Add thawed chicken breasts on top.

Mix together greek yogurt + HALF of the fiesta ranch seasoning, and spread this mixture over chicken. Use remaining half of fiesta ranch seasoning to sprinkle on top.

Cover tightly with foil and bake for 1 hour on 350F, NO PEEKING.

Once done, sprinkle a little cheese on top and return to oven just to melt.
