No Peek Fiesta Chicken

Ingredients

  • 2 cups minute rice (uncooked)
  • 2 cans cream of chicken
  • 1 can chicken broth
  • 1 can water
  • 1 tsp caldo de tomat bullion
  • 4-6 chicken breasts
  • 1 packet fiesta ranch seasoning
  • 5 oz plain/unflavored greek yogurt
  • shredded cheese (optional)
  • fresh pico (optional)

  • green beans (air fried)
  • broccoli

Instructions

    In a 9x13 baking dish, pour 2 cups of uncooked minute rice.

    Add cream of chicken soups, chicken broth, and stir until combined.

    Fill up that chicken broth can with water + stir in 1 tsp of the tomato bullion seasoning, then pour over. Stir everything until combined.

    Add thawed chicken breasts on top.

    Mix together greek yogurt + HALF of the fiesta ranch seasoning, and spread this mixture over chicken. Use remaining half of fiesta ranch seasoning to sprinkle on top.

    Once done, sprinkle a little cheese on top and return to oven just to melt.
