Ingredients
- 2 cups minute rice (uncooked)
- 2 cans cream of chicken
- 1 can chicken broth
- 1 can water
- 1 tsp tomato bullion seasoning
- 4-6 chicken breasts
- 1 packet fiesta ranch seasoning
- 5 oz greek yogurt (plain/unflavored)

- pico (fresh, optional)
Instructions

In a 9x13 baking dish, pour 2 cups of uncooked minute rice

add cream of chicken soups, chicken broth, and stir until combined.

Fill up that chicken broth can with water + stir in 1 tsp of the tomato bullion seasoning, then pour over. Stir everything until combined

Add thawed chicken breasts on top

Mix together greek yogurt + HALF of the fiesta ranch seasoning, and spread this mixture over chicken. Use remaining half of fiesta ranch seasoning to sprinkle on top.

Cover tightly with foil and bake for 1 hour on 350F, NO PEEKING.

Once done, sprinkle a little cheese on top and return to oven just to melt. I like to add fresh pico on top of mine!
