Ingredients

per 1 bowl:

  • 1 lb lean ground beef
  • 2 potatoes of choice ((I use russet))
  • 1/2 au jus packet ((dry))
  • green bell pepper (finely diced, to taste)
  • onion (finely diced, to taste)
  • mushroom (finely diced, to taste)
  • Shredded cheese of choice ((I usually use pepperjack or mozzarella here))

Sauce:

  • Light mayo ((or plain greek yogurt))
  • hot sauce (splash)
  • 1/4 tsp cajun seasoning
  • water ((splash to thin))

Instructions

    Slice both potatoes into thin fry shape pieces (I use my veggie slicer for this), toss in a small drizzle of avocado oil then season generously (I season with seasoning salt, pepper, garlic). Air fry on 400 for 10 min, shake, 5 more minutes or until crisp. Can do these on a baking sheet in oven if you don't have air fryer (heat on 425F).

    Brown ground beef in large skillet, when it's just about done, add finely diced onion and bell peppers and cook until tender. Sprinkle about 1/2 au jus packet over everything + stir. Add splash of water for some moisture if needed.
