Ingredients

  • 2-3 russet potatoes (sliced into even fry shape)
  • 1/2 tsp seasoning salt
  • 1/2 tsp garlic
  • 1/2 tsp paprika
  • 1/2 tsp chili powder
  • 1/2 tsp cumin
  • 1 lb lean beef
  • taco seasoning packet (plus taco sauce or salsa of choice)
  • 1/2 cup fat free refried beans
  • 3 TBS queso or nacho cheese
  • 3 TBS shredded cheese

OPTIONAL TOPPINGS

  • greek yogurt
  • lettuce
  • fajita veggies

    Slice potatoes into even fry shape (I like mine to be pretty thin). Mist with oil and toss in listed seasonings. Air fry (or bake) on 400F for 10 min, shake, 10-15 more minutes or until crisp.

    Prepare taco meat by browning ground beef, then add taco seasoning packet and a splash of taco sauce or salsa. Mix in 1/2 cup refried beans and stir until combined.

    Assemble 4 bowls/tupperware in this order: -Divide fries evenly amongst 4 bowls -1/2 cup cooked taco meat -1 TBS shredded mexican cheese -1-2 TBS queso or nacho cheese -optional other toppings of choice
