Ingredients

  • 2 TBS queso (I like Panchos)
  • 1/2 cup cottage cheese ((blended))
  • 1/2 tsp taco seasoning
  • 1/2 cup lower cal chorizo (I like Morningstar)
  • 2 TBS shredded cheese
  • tortilla chips (quest chips, sliced veggies for dipping)

Instructions

    Prepare chorizo of choice, I like using morning star chorizo for this, itโ€™s low cal and tastes great!

    Add all ingredients to small bowl or tupperware (except cheese which goes on top)

    Mix well then add shredded cheese

    Microwave for 1-2 min (or bake) until hot and melty. I like to eat this with a bag of taco Quest chips or a mindful serving of tortilla chips and sliced veggies!
