PINEAPPLE
PORK BOWLS

ingredients:
1 pork tenderloin
lcan crushed pineapple
1/4 cup brown sugar swerve
1/4 cup soy sauce
1/4 cup teriyaki sauce
1/2 tsp garlic, ginger, red pepper flakes,
salt/pepper
1 package coconut jasmine ready rice
1 steamer pack cauli rice
pineapple rings
Tropical Slaw:
2 cups slaw/shredded cabbage
squeeze of lime
drizzle of honey, 1-2 TBS
splash of pineapple juice, 2-3 TBS
1-2 TBS soy sauce
diced mango or pineapple
optional shredded coconut
salt, pepper, red pepper flakes

directions
PULLED PORK:
Add all ingredients to crockpot and
cook on low for 5-6 hours or until pork is
165F or shreds apart easily. Shred pork
into small pieces and return to sauce.
This makes quite a few servings, | like to
use leftovers in pulled pork tacos or
nachos!
Cook rice and cauli rice according to
package directions and mix
Mix slaw ingredients together
Assemble 4 bowls/tupperware in this
order:
-divide rice mixture evenly
-1/2 cup pulled pork mixture, adding
some of the sauce on top
tropical slaw
-seared pineapple ring
*if eating leftover, store in air tight
containers and microwave to reheat
before eating*
