COWBOY
CRUNCH BOWLS
ingredients:
4 oz chicken of choice (see directions)
2 TBS black beans
2 TBS corn
2 TBS diced red onion
2 TBS diced red pepper
cilantro to taste
handful of cabbage or slaw mix
DRESSING:
1 TBS light mayo
2 TBS Greek yogurt
1/2 tsp fajita seasoning
squeeze of lime
* Serve with 2-3 TBS chili cheese Fritos

Prepare chicken, | like to season these
with fajita seasoning then air fry 400F
5 min, each side (let them rest a
couple minutes before shredding or
chopping into small pieces), rotisserie
chicken also works great in this one!
Add all ingredients to a bowl or
tupperware, shake, stir, or toss until
evenly coated and combined.
When ready to eat, sprinkle in chili
cheese fritos for crunch and enjoy
cold!
