ingredients:
1 sweet potato, diced
2 boneless skinless chicken
tenderloins
1-2 TBS chopped bacon
2 TBS BBQ sauce of choice
1 TBS chipotle sauce of choice
BBQ seasoning
optional slaw:
1/2 cup slaw mix or cabbage
1-2 TBS vinegar
1 TBS light mayo
splash of milk
1 TBS sugar (or substitute)
salt, pepper
optional pickles (I like the spicy
maple pickles from walmart with this)
1 TBS crushed french fried onions
*recipe is for 1 bowl, (I typically prep 3-4
at a time) if following suggested servings,
modify amounts to fit your needs*

Prepare chicken, | like to season these
with BBQ seasoning + paprika then air
fry 400F 5 min, each side (let them rest
a couple minutes before slicing).
Dice potato into bite sized cubes, mist
with oil and season well with salt,
pepper, garlic. Air fry (or bake) 400F for
10 min, shake, 10-15 more minutes or
until crisp.
If adding slaw with this, add ingredients
to a small bowl and stir well until
combined
Add all ingredients to a bowl by either
layering or mixing all together, then
drizzle with BBQ sauce and chipotle
sauce of choice, top with a sprinkle of
french fried onions for crunch!
