KICKIN
CHICKEN
FRIED RICE
ingredients:
*recipe is for 1 bowl, (if making as a
family meal, multiply ingredients by 4)*
1/2 cup cooked rice of choice
1/2 cup cooked cauliflower rice
1/2 cup chopped chicken (I like crispy
for this, Real Good is my favorite) If using caramelized onion sauté
these first, then prepare rice and
cauliflower rice according to
1TBS crispy bacon bits package direction and mix together
by tossing in a skillet.

1/2 tsp BBQ (or cajun) seasoning
Prepare chicken of choice and chop
KICKIN CHICKEN SAUCE: . . er
* 2TBS light mayo or greek yogurt into small pieces, stir this in to your
* 1 TBS ketchup rice mixture
* 1tsp mustard
+ 1/4 tsp cajun seasoning Sprinkle with crispy bacon and BBQ
splash of water or pickle juice to thin seasoning
Mix together sauce ingredients and
