ingredients:
¢ 2chicken boneless skinless chicken
tenderloins
* 1cup frozen diced hashbrowns
* 1light laughing cow cheese
* 1/4 cup plain nonfat Greek yogurt
* 1/4 cup reduced fat cream of chicken
soup
1/2 tsp salt, pepper
¢ 2 TBS shredded cheddar cheese
* 3 TBS crushed cornflakes (or ritz
crackers)
feel free to add in other fillings of choice
(broccoli, zucchini, etc.)
“recipe is for 1 bowl, (I typically prep 3-4 at
a time) if following suggested servings,
modify amounts to fit your needs*

Prepare chicken, | like to season with
seasoning salt, pepper, garlic, paprika,
then air fry 400F 5 min, each side (let
them rest a couple minutes before
shredding or chopping into small
pieces), rotisserie chicken also works
great here
In a small baking dish (or glass meal
prep container), mix together all the
ingredients listed (EXCEPT the
cornflakes).
Add crushed cornflakes on top + mist
with cooking spray or drizzle with melted
butter, bake on 375 for 25 minutes
If you'd like to make this in a large
casserole dish, multiply the ingredients
by 4 and bake in a 9x13 baking dish for
25-35 minutes!
Store in fridge for about 5 days or freeze
to keep longer. | reheat in microwave!
