ingredients: * 1.5 cup instant/minute rice ¢ 1.5 cup water * 1tsp tomato bouillon (Knorr brand) * 1 lb lean beef * 1 taco seasoning packet ¢ 1/4 cup rotel * 1/4 cup salsa con queso or cheese sauce of choice « 6 TBS shredded mexican cheese * doritos, crushed (approx 3-4 chips per bowl) “recipe is for 4 bowls, (I typically prep 3-4 at a time) if following suggested servings, modify amounts to fit your needs” IMQOIOA: macros (per serving) (approximate) Prepare taco meat, brown in a skillet and add taco seasoning packet and a splash of water or enchilada sauce In a microwave safe bowl, add water, tomato bullion, and instant rice. Stir and microwave 5-6 minutes (or until rice is done) Mix rotel and salsa con queso/cheese sauce together in a bowl and microwave until warm Assemble 4 bowls/tupperware in this order: -1/2 cup cooked rice -1/2 cup taco meat -2 TBS rotel cheese dip -2 TBS shredded cheese -3-4 crushed doritos Microwave or bake until melty when ready to eat! *if eating leftover, store in air tight containers and microwave to reheat before eating* 55 | GO HOME
