ingredients:
1/2 cup cooked pasta of choice
2 boneless, skinless chicken
tenderloins
3 TBS italian panko bread crumbs
1/2 cup spinach
2-3 TBS sun dried tomato
1 TBS parmesan
1/2 cup marinara or vodka sauce
2-3 TBS blended cottage cheese
(optional but adds creaminess and
protein)
*recipe is for 1 bowl, (I typically prep 3-4
at a time) if following suggested servings,
modify amounts to fit your needs*

Prepare chicken, | mix 1/4 tsp seasoning
salt, pepper, garlic, italian, paprika with
my breadcrumbs then press each
chicken tenderloin into the mixture until
evenly coated
Air fry 400F 5 min, each side (let them
rest a couple minutes before slicing).
-saute spinach until wilted
-cook pasta of choice
-mix together marinara with cottage
cheese
Add all ingredients to a bowl then drizzle
with sauce and toss to combine, top
with parmesan and crushed croutons if
you prefer
*if eating leftover, store in air tight
containers and microwave to reheat
before eating*
