ingredients:
¢ 2boneless skinless chicken
tenderloins
¢ fajita seasoning, paprika
¢ 1 TBS shredded cheese
¢ pico, shredded lettuce
¢ 3-4 crushed doritos
¢ 2TBS white queso
¢ 1 TBS taco or enchilada sauce
5 minute mexican rice:
¢ 1cup water
¢ 1 tsp tomato bouillon (Knorr)
¢ 1cup instant rice
(makes 2 servings)

time) if following suggested servings, modify
amounts to fit your needs*

Prepare chicken, | like to season
tenderloins with fajita seasoning then
air fry 400F 5 min, flip, 5 more minutes.
Let it rest on a plate or cutting board
before slicing.
Prepare mexican rice by mixing water
and seasoning, then stir in rice and
microwave for 5:30 minutes or until
done/tender. This makes 2 servings of
rice for me.
Add all ingredients to a bowl by either
layering or mixing all together, then
drizzle with queso and taco sauce.
*if eating leftover, store in air tight
containers and microwave to reheat
before eating*
