BAKED
ingredients:
* 1/4 cup cooked rice of choice
¢ 1/4 cup cooked cauliflower rice
* lime, cilantro
« mix ins of choice, | like black beans,
corn, pico, avocado
* 1/2 cup lean taco meat
* 2 TBS greek yogurt or light sour cream
* 27TBS salsa
* 1 TBS white queso
* 2-3 TBS quesadilla cheese
“recipe is for 1 bowl, (I typically prep 3-4
at a time) if following suggested servings,
modify amounts to fit your needs*

Prepare rice and cauliflower rice
according to package directions
then mix together. Give it a big
squeeze of lime and mix in some
chopped cilantro
Prepare taco meat by browning
lean beef in a skillet until done, then
mix in taco seasoning and a splash
of water
Mix together greek yogurt and salsa
Add rice, mix ins of choice, taco
meat to a small baking dish or bowl,
stir to combine
Add sauce, shredded cheese, and a
TBS of queso then bake (or
microwave) until cheese is melted
Serve with lettuce or tortilla chips
